Baja Fish Tacos
Ingredients
- 1 large filet of cod or mahi
- 1 cup AP flour
- 1 TBSN baking powder
- 1 tsp of chipotle powder
- 1 tsp of cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tsp of kosher salt
- 1 tsp of pepper
- 1 cup of Yuengling Lager
- Peanut oil
Mango Salsa:
- 1 cup of diced mangos
- 1/4 diced red peppers
- 1 jalapeno minced
- Juice of one lime
- 1 tbsp of honey
Steps
- Prepare batter. Mix flour, baking powder, spices, and beer to make a pancake-density batter.
- Cut your fish into strips, no more than 1 inch thick.
- Season your fish with salt and pepper.
- Add peanut oil to the pan, and heat it to 350 degrees.
- Dip your fish sticks in the batter, let the excess batter run off, and carefully lower into the heated oil.
- Cook till golden, top with lettuce and mango salsa.
