Baja Fish Tacos

Ingredients

  • 1 large filet of cod or mahi
  • 1 cup AP flour
  • 1 TBSN baking powder
  • 1 tsp of chipotle powder
  • 1 tsp of cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp of kosher salt
  • 1 tsp of pepper
  • 1 cup of Yuengling Lager
  • Peanut oil

Mango Salsa:

  • 1 cup of diced mangos
  • 1/4 diced red peppers
  • 1 jalapeno minced
  • Juice of one lime
  • 1 tbsp of honey

Steps

  1. Prepare batter. Mix flour, baking powder, spices, and beer to make a pancake-density batter.
  2. Cut your fish into strips, no more than 1 inch thick.
  3. Season your fish with salt and pepper.
  4. Add peanut oil to the pan, and heat it to 350 degrees.
  5. Dip your fish sticks in the batter, let the excess batter run off, and carefully lower into the heated oil.
  6. Cook till golden, top with lettuce and mango salsa.
